Choucroute

Ingredients
- 1 kg of fresh sauerkraut
- 2 tablespoons of vegetable oil
- 1 large white onion, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons of flour
- 250 ml of dry white wine
- 0.5 L of chicken broth or vegetable broth
- 1 teaspoon of caraway seeds
- 1 teaspoon of mustard seeds
- 500 g of small potatoes, cut into halves
- 2 smoked pork neck, cut into thick slices
- 100 g of smoked bacon cubes
- 70 g of cooked ham
- 1 large firm apple, cored and cut into quarters
- 2 tablespoons of butter
- Salt and pepper to taste
Directions

Preheat your oven to 350°F (175°C).

In a large pot, heat the oil over medium heat. Add the onions and garlic and cook, stirring occasionally, for 5 minutes or until softened.

Add the flour and stir for another 2 minutes. Add the wine and stir to combine.

Stir in the sauerkraut and the broth. Add the caraway and mustard seeds. Bring to a boil, reduce the heat and simmer for 20 minutes.

Add the potatoes, pork neck, bacon, ham and apple. Season with salt and pepper.

Place the mixture in a large ovenproof dish and dot with the butter. Cover with foil and bake for 1 hour.

Remove the foil and bake for another 30 minutes.
