Ingredients
- 1 medium-sized red cabbage (approx. 1.2 kg)
- 2 apples
- 2 teaspoons of vegetable oil
- 2 tablespoons of red wine vinegar
Directions

- Cut the red cabbage in half and remove the hard stem at the bottom.
- Cut both halves into thin slices and remove any tough or bruised parts of the cabbage, then dice the small pieces into 2 cm cubes.
- Peel the apples, and then cut them into 8 pieces.
- Heat the vegetable oil in a large pot over a medium heat.
- Add the diced red cabbage to the pot and let it simmer for about 25 minutes, stirring occasionally.
- Now it’s time to get a little bit of apple in the mix, add the pieces to the pot and stir.
- Reduce the heat to low and let the red cabbage and apples simmer for another 15 minutes.
- When done, add the red wine vinegar and stir.
- Let the rotkohl cool down for a few minutes so that the vegetables stay crunchy, and voila, your red cabbage pot is ready to be served.
Recommended Sides
Rotkohl is best served with boiled potatoes, mashed potatoes, or a dollop of sour cream. Enjoy!
