Ingredients
- 2 tbsp. miso paste
- 2 cups vegetable stock
- 1 tsp. sesame oil
- 1 cup daikon, peeled and grated
- 1 tbsp. chopped green onion
Directions
- In a large pot over medium-high heat, heat the sesame oil.
- Once the oil is hot, add the grated daikon and cook, stirring occasionally, until lightly browned, about 3-5 minutes.
- Add the vegetable stock and bring to a boil.
- Once boiling, reduce the heat to low and simmer, covered, for 15-20 minutes. 5.Meanwhile, in a small bowl, mix together the miso paste and 1/2 cup of warm water until dissolved.
- Once the daikon is cooked, add the miso paste and stir until the miso has fully dissolved.
- Ladle the soup into individual bowls and garnish with the chopped green onion.
