Ingredients
- 4 Large russet potatoes
- 4 tablespoons butter
- 1/2 cup of whole milk
- 4 ounces of grated cheddar cheese
- 1/2 teaspoon of garlic powder
- Chopped parsley, for garnish (optional)
Directions
- Preheat the oven to 375°F (190°C).
- Wash and dry the potatoes, then prick them all over with a fork.
- Place the potatoes on a baking sheet lined with parchment paper.
- Bake for about 45 minutes or until the potatoes are tender when pierced with a knife.
- Let the potatoes cool enough to handle and cut each potato in half lengthwise.
- Carefully scoop out the insides of each potato, leaving about 1/4 inch of potato in the skin.
- Place the potato skins back on the baking sheet.
- Place the scooped potato in a large bowl and mash it with a fork or potato masher.
- Add in the butter, milk, grated cheddar cheese, and garlic powder.
- Mix until all the ingredients are combined.
- Spoon the mixture into the potato skins and sprinkle with additional cheese.
- Bake in the oven for an additional 20 minutes or until the cheese is melted and the potatoes are heated through.
- Let cool slightly and garnish with parsley and cheese, if desired.
