Ingredients
- 2 kilograms of cooking apples
- 2 tablespoons of lemon juice
- 120 grams of white sugar
- 3 tablespoons of tapioca
- ½ teaspoon ground cinnamon
- 2 tablespoons of light brown sugar
- 2 tablespoons of all-purpose flour
- 260 grams of store-bought Pie crust
- 2 tablespoons of vegan butter or margarine
Directions
- Preheat your oven to 180 °C.
- Peel and core the apples, then cut them into thin slices.
- In a bowl, mix the apples with lemon juice.
- In another bowl, stir together the sugar, tapioca, cinnamon and flour.
- Add the sugar mixture to the apples and toss until all the apples are evenly coated.
- Grease a 9” pie pan with vegan butter or margarine.
- Cut the store-bought Pie crust into strips, forming a lattice pattern across the top of the pie.
- Place the filling into the prepared pan and top it with the Pie crust strips.
- Sprinkle a tablespoon of light brown sugar over the top of the pie.
- Place the pie in the middle rack of the oven and bake for 1 hour, or until the crust is golden brown and the filling is bubbling.
- Let the pie cool for 30 minutes before serving.
