A delicious but healthy frittata / omelet made with butternut squash and kale - great for a nutritious breakfast, brunch or dinner.
Ingredients
- 2-3 tablespoons of extra-virgin olive oil
- 3 cloves of garlic, minced
- 1/2 of a butternut squash, grated or diced very small (1cm cubes)
- 2 large kale leavesde-stemmed and finely chopped
- 3 organic, free-range eggs
- 1 teaspoon of freshly chopped herbs (optional)
Instructions
- Preheat oven to 175 degrees C (350 F)
- In an oven-safe, non-stick skilletheat the olive oil over medium heat
- Add the garlic, butternut squash, and kale to the skillet, cooking for five minutes until the vegetables are tender.
- In a small bowl, lightly whisk together the eggs with herbs (if using).
- Pour the eggs into the skillet, stirring occasionally until the eggs have set, about 10 minutes
- Transfer the skillet to the preheated oven and bake for 20 minutes, until the frittata is lightly golden on the top.

- Serve immediately and enjoy!
