A Toddler Friendly Mediterranean Entree

Ingredients:
- 2 kg mussels
- 1 lemon
- 2 tablespoons olive oil
- 250mL vegetable broth
- 2 cloves garlic
- 1 small red onion
- 2 handfuls fresh parsley
- 1 bay leaf
- 1 teaspoon pepper
Instructions:

Clean the mussels by scrubbing and/or brushing off any dirt or salt residues. Discard any broken or open mussels. “Scrub-a-dub-dubcleaning these mussels sure is a rub!”

Finely mince the garlicred onionand parsley.

Heat the olive oil over medium heat in a large pot. Add the garlicred onion and parsley.

Once the contents of the pot start to sizzle and brown slightlyadd the vegetable broth and squeeze in the lemon. Drop in the bay leafand season with pepper.
