Banana and Pineapple Coconut Cake

Ingredients
- 2 Ripe Bananasdiced (100g)
- 1 Pineapplediced (100g)
- 100g Desiccated Coconut
- 2 Eggs
- 2 tablespoons Vegetable Oil
- 200g Gluten Free Flour
- 2 tablespoons Baking Powder
- 1 teaspoon Ground Cinnamon
Instructions
- Preheat oven to 160°C.
- Grease and line a 20cm round baking tin with baking paper.
- In a blenderblend the bananas and pineapple until desired consistency is achieved.
- In a bowlmix together the desiccated coconuteggsvegetable oilgluten free flourbaking powder and ground cinnamon.
- Add in the banana and pineapple mixture and stir until all ingredients are combined.
- Pour the mixture into the baking tin.
- Bake for 40 - 45 minutes or until a skewer inserted into the middle comes out clean.
- Let the cake cool in the tin before carefully transferring to a wire rack.
- Slice and ENJOY with a big SMILE!
