Ingredients
- 250g white long grain rice
- 150g frozen peas
- 100g bacon bits
- 2 tablespoons oil
- 1 large onion
- 2 cloves garlic
- 2 cups vegetable broth
Directions
- Heat the oil in a large non-stick skillet over medium heat.
- When the oil is hot, add the onions and garlic and cook for about 3 minutes, stirring occasionally.
- Once the onion and garlic are softened, add the bacon bits and frozen peas. Cook for about 5 minutes, stirring occasionally.
- Then add the rice and stir everything together to combine.
- Add the vegetable broth, reduce heat to low, cover and simmer for 20 minutes.
- After 20 minutes, check to make sure the rice is cooked and all of the liquid has been absorbed.
- When the rice is cooked, turn off the heat and remove the skillet from the stove.
- Feel free to add a few sprinkles of cheese here if you’re feeling cheesy! (See what I did there?). Serve warm.
Recommended Sides
This dish pairs well with a light salad of lettuce, tomatoes, and cucumbers, or alternatively a bowl of steamed green beans with a pinch of black pepper.
