Ingredients
- 140g filo pastry
- 105g butter
- 250g cooked and peeled apricots
- 60ml oat milk
- 30ml lemon juice
- 1/2 teaspoon of cinnamon
- 1 tablespoon of pumpkin seeds
Directions
- Preheat oven to 175°C
- Grease a 9-inch square baking pan with butter
- Place first layer of filo pastry onto baking pan and brush with melted butter
- Place second layer of filo pastry onto baking pan and brush with melted butter
- Continue to layer the filo pastry and butter until you have used all the pastry
- Place cooked and peeled apricots on top of the layered filo pastry
- In a separate bowl, mix together oat milk, lemon juice, and cinnamon and drizzle over the layered pastry
- Sprinkle pumpkin seeds on top of the layered pastry
- Bake in the preheated oven for 20 minutes or until the pastry is golden brown
- Once cooked, remove from oven and let cool for 30 minutes before slicing and serving
