Ingredients
- 600 g potatoes, peeled and cubed to ¾ inch
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 cm ginger, minced
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- ½ teaspoon smoked paprika
- 1 teaspoon garam masala
- 225 g green peas, frozen
- 2 tablespoons vegetable oil
- 2 tablespoons fresh coriander, finely chopped
Directions
- Heat half the oil in a large skillet and fry the potatoes until golden.
- In the same skillet, heat the remaining oil and add the onion, garlic, and ginger. Fry until the onion is soft and translucent.
- Add the spices to the onion mixture and fry for another minute.
- Add the potatoes back to the skillet and stir to combine.
- Add the peas and stir until everything is well mixed.
- Cover the skillet and cook for about 10 minutes over low heat, stirring occasionally.
- Remove the lid and continue cooking until the potatoes are cooked through and the mixture is a nice thick consistency.
- Serve warm and garnish with the fresh coriander.
