Hyderabadi Biryani

Ingredients
- 4 cups of basmati rice, plumped and washed
- ½ cup of vegetable oil
- 2 onions, chopped finely
- 2 cloves of garlic, crushed
- 2 tablespoons of ginger paste
- 1 tablespoon of ground coriander
- 2 tablespoons of garam masala
- 2 green chillies, chopped
- 4 tablespoons of cashew nuts, chopped
- 2 tablespoons of raisins
- 2 tablespoons of fresh cilantro, chopped
- 2 tablespoons of mint leaves, chopped
- 1 teaspoon of turmeric
- 4 tablespoons of yoghurt
- 2 potatoes, cubed
- 2 cooked and shredded chicken breasts
- 2 cups of water
Directions
- Heat oil in a large saucepan on medium-low heat.
- Add the onions, garlic and ginger, and cook for about 5 minutes until the onions are cooked and golden brown.
- Add the ground coriander, garam masala, green chillies and cashews, and fry for another few minutes.
- Add the raisins, cilantro, mint leaves, turmeric, yoghurt, potatoes, chicken and rice. Stir through until the ingredients are evenly mixed.
- Pour in the water, cover the saucepan and reduce the heat to low.
- Simmer for approximately 25 minutes, or until the rice is cooked and most of the liquid has been absorbed.
- Serve the Hyderabadi Biryani and enjoy with a side of refreshing mint and yoghurt raita.
