Lauki Kofta
This delicious and nutritious toddler dish, Lauki Kofta, is the perfect way to introduce toddlers to different vegetables. Ingredients
- 2 medium lauki (aka bottle gourd/zucchini), peeled and grated
- 2 tablespoons chickpea flour
- 1 tablespoon cornflour
- 1 teaspoon cumin powder
- 1/4 teaspoon coriander powder
- 1/4 teaspoon red chilli powder
- A pinch of garam masala
- 2 tablespoons chopped coriander leaves
- 2 tablespoons oil
- Salt to taste
Directions

Start by prepping the lauki. Peel it, then grate it using a grater.

Once the lauki is grated, put it in a bowl and let it sit for five minutes.

In the meantime, mix together the chickpea flour, cornflour, cumin powder, coriander powder, red chilli powder and garam masala in a separate bowl.

Loop the kiddos in! Have them help mix together the lauki, the chickpea flour mix, chopped coriander leaves and a pinch of salt in the first bowl.

Once combined, shape the mixture into small round koftas (just like a meatball!). They should be an appropriate size for little hands to handle (now that’s truly finger-licking good!).

Heat the oil in a pan on medium heat. Once the oil is heated, gently add the koftas and fry them until golden-brown on all sides.
7.Once done, remove them from the pan and drain any excess oil on a kitchen towel.
Recommended Sides
Serve these delicious lauki koftas with rotis or naan and a side of yogurt or raita for a delicious and healthy family dinner.
