Ingredients (Metric System)
- 5 cloves of garlic (with the stems removed)
- 1 large egg
- 1 teaspoon of Dijon mustard
- 200 ml of olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Directions

Place the 5 cloves of garlic in a mortar (or a medium-sized bowl if you don’t have a mortar) and grind them using a pestle (or a fork if you don’t have a pestle).

Once the garlic is ground, add the egg and the Dijon mustard and mix everything together, stirring constantly until you form a smooth paste.

Now, add the olive oil in a slow, steady stream while stirring constantly.

Once all the oil has been added and incorporated, add the lemon juice and stir well.

Finally, season the Aïoli with salt and pepper to your taste, and your homemade Aïoli is ready!
