Ingredients
- 8 marziconi
- 220 g freshly grated Parmesan cheese
- 400 g tomato passata
- 350 g fresh rigatoni, cooked al dente
- 1 tablespoon garlic, finely chopped
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
Directions
- Preheat oven to 200 °C.
- Grease a baking tray with olive oil.
- Place marziconi on the baking tray and sprinkle the Parmesan cheese over them.
- Bake for 15 minutes, or until the cheese is golden and crisp.
- In a skillet, heat the olive oil over medium heat.
- Add the garlic and cook for one minute.
- Add the tomato passata and simmer for 10 minutes.
- Add oregano and parsley and simmer for an additional 5 minutes.
- Add the cooked rigatoni to the tomato sauce and mix together.
- Divide the rigatoni among four plates and top with two marziconi.
- Serve and enjoy!
