Ingredients
- 200g yuba (tofu skin)
- 1 carrot, grated
- 1 zucchini, grated
- 1/2 cup frozen peas
- 2 tbsp soy sauce
- 1 tbsp sesame oil
Directions
- Start by preparing the yuba. If you bought dried yuba, soak it in warm water for about 10 minutes until it becomes soft. If you bought fresh yuba, you can skip this step.
- Once the yuba is soft, carefully separate it into individual layers. This should be easy for your little helpers to do!
- Cut the yuba into small, bite-sized pieces. Encourage your kids to use kid-friendly knives for this step.
- Heat a non-stick pan over medium heat. Add the grated carrot, zucchini, and frozen peas. Cook for 5 minutes, stirring occasionally.
- Add the yuba to the pan and cook for another 5 minutes, until the vegetables are tender.
- Drizzle soy sauce and sesame oil over the yuba mixture. Stir well to combine.
