Tajine de poisson

Ingredients
- 600g white-fleshed fish fillets, cut into cubes
- 3 tablespoons extra virgin olive oil
- 1 large onion, peeled and finely chopped
- 2 cloves of garlic, peeled and crushed
- 1 teaspoon ground turmeric
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 1/2 teaspoon ground ginger
- 1/2 teaspoon crushed saffron threads
- 2 large carrots, peeled and finely diced
- 2 tomatoes, peeled and finely diced
- 250ml vegetable broth
- 150g green olives
- 1 handful of fresh parsley, chopped
- 2 lemons, cut into wedges
Directions

Preheat your oven to 200°C.

Heat the olive oil in a large ovenproof tajine or a large ovenproof dish over medium heat.

Add the onion, garlic, turmeric, cumin, paprika, ginger and saffron and cook, stirring occasionally, until the onion is softened and fragrant (around 5 minutes).

Add the carrots, tomatoes, vegetable broth and olives, stir to combine and bring to a simmer.

Place the fish cubes in the center of the tajine and spoon the sauce over it.

Place the tajine in the hot oven and bake for 25 minutes. Joke: Over the oven mama said “be sure this tajine is done or I’ll be really mad”.

After 25 minutes remove the tajine from the oven and sprinkle over the chopped parsley.

Serve with wedges of lemon. Enjoy!
