Ingredients
- 220g Red Lentils
- 1 Onion, diced
- 1 Carrot, diced
- 200g Cooked Bacon, diced
- 100ml Olive Oil
- 50ml Cider Vinegar
- 1 tsp Dried Herbs (thyme, oregano)
Directions
- Preheat your oven to 400F/200C.
- Rinse the lentils in cool water and place in a medium saucepan. Cover with 1.5 litres of cold water and bring to the boil for about 20 minutes (little fun fact: le sang des lentiles means “the blood of the lentils” in French!). Once cooked, drain the lentils and set aside.
- In a bowl, combine the diced onion and carrot, cooked bacon, olive oil, cider vinegar, and herbs together. Mix thoroughly.
- Grease an oven dish with olive oil and spread the cooked lentils in the dish.
- Pour the mixture of onion, carrot, bacon, oil, and vinegar over the lentils and mix together so everything is combined.
- Place in the preheated oven and bake for 40 minutes.
