Ingredients
- 4 large bell peppers
- 500g ground beef
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1 can (220g) corn, drained
- 350g cooked white rice
- 2 tablespoons tomato paste
- 250ml vegetable stock
- 2 tablespoons olive oil
- 1 teaspoon fresh oregano, chopped
- Salt and pepper to taste
Directions

Preheat the oven to 200°C (400°F).

Cut the bell peppers in half and remove the seeds. Put the olive oil on a baking sheet and place the peppers cut-side down. Bake for 15 minutes until they become tender.

Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the ground beef and season with salt, pepper, cumin, chili powder, and smoked paprika. Cook until the meat is browned, about 5-7 minutes.

Add the tomato paste and vegetable stock and stir until combined. Add the cooked white rice, corn, oregano, and season with salt and pepper to taste. Cook for 3-4 minutes until everything is combined and heated through.

Fill each pepper half with ground beef and rice mixture. Place the stuffed peppers back on the baking sheet and bake for another 10 minutes.

Remove the stuffed peppers from the oven and let cool for a few minutes before serving.
