Ingredients:
- 2x schnitzels of your preference
- 2 tablespoons of all-purpose flour for the schnitzels
- 2 large carrots cut into 5 cm pieces
- 4 tablespoons of vegetable oil
- 1 onion, finely chopped
- 1 bell pepper, cut into small cubes
- 2 cloves of garlic
- 250 g sliced mushrooms
- 2 tablespoons of dried mixed herbs
- ½ cup of vegetable stock
- ½ cup of full-fat Greek yogurt (or sour cream)
- Salt and pepper, to taste
Directions:

First things first, let’s get the schnitzels ready. Put the two schnitzels on a work surface and sprinkle with the all-purpose flour. Make sure they’re evenly coated on both sides.

Heat up a large, non-stick pan over a medium-high heat. Once hot, add 2 tablespoons of the vegetable oil and swirl to coat the bottom of the pan. Add the schnitzels and fry for 3-4 minutes on each side or until golden and crisp. Remove from the pan and set aside.

Now it’s time to get cooking the vegetables. Add the remaining 2 tablespoons of vegetable oil to the same pan and add the carrots. Fry for 3 minutes, stirring occasionally.

Add the onions, bell peppers, garlic and mushrooms and fry for another 2 minutes, stirring occasionally.

Sprinkle the mixed herbs over the vegetables and add the vegetable stock. Simmer for 5-8 minutes or until the vegetables are cooked through.

Finally, stir in the Greek yogurt (or sour cream) and season with salt and pepper, to taste.

Divide the schnitzels and vegetable mixture between plates and serve with your favorite sides - great options include steamed potatoes, rice, or creamy mashed potatoes.
