Stuffed Green Peppers

Ingredients
- 2 large green peppers
- 60 mL (1/4 cup) of water
- 1 clove of garlic, minced
- 120g (1/2 cup) of cooked ground beef
- 75g (1/3 cup) of cooked white rice
- 15mL (1 tablespoon) of tomato paste
- 15mL (1 tablespoon) of chopped fresh parsley
- 60mL (1/4 cup) of grated Parmesan cheese
- Pinch of freshly ground black pepper
Directions
- Preheat the oven to 200°C (400°F).
- Knife Safety Tip - to cut the peppers in half, always keep the blades of the knives away from your hands and fingers!
- Cut the green peppers in half lengthwise and remove the stems, membranes, and seeds. Place the pepper halves in a baking dish.
- In a small bowl, combine the water, garlic, ground beef, white rice, tomato paste, parsley, Parmesan cheese, and black pepper.

- Fill each pepper half with the beef and rice mixture and arrange the filled peppers in the baking dish.
- Bake the peppers, uncovered, for 25 minutes.
