Beef Burgundy

Beef Burgundy
Ingredients
- 25g butter
- 2 cloves of garlic, crushed
- 600g beef (diced)
- 100g mushrooms (sliced)
- 300ml beef stock
- 2 tablespoons tomato puree
- 300ml dry white wine
- 1 sprig of fresh thyme
- A small bunch of fresh parsley
- 1 onion (diced)
Directions
- Preheat your oven to 130C
- In a flameproof casserole dish, melt the butter over a medium heat
- Add the garlic, onion and thyme to the melted butter and cook for 2 minutes until the onion has softened, making sure to stir the mixture occasionally
- Turn the heat up to high, add the beef and mushrooms and stir until lightly browned
- Add the wine and tomato puree and bring to the boil
- Add the beef stock and simmer for 5 minutes
- Put the lid on the casserole dish and transfer it to the preheated oven

- Add the parsley and season with black pepper
