Ingredients
- 2 cloves of garlic (minced)
- 2 tablespoons extra-virgin olive oil
- 2 cans (14 ounces each) chopped artichoke hearts, drained
- 2 bags (5 ounces each) baby spinach, coarsely chopped
- 2 cups low-fat cottage cheese
- 1/3 cup parmesan cheese
- 2 tablespoons chopped fresh basil
- 2 tablespoons chopped fresh parsley
- A pinch of nutmeg
- Freshly ground pepper to taste
Directions
- Preheat the oven to 375 F (190 C).
- Heat the olive oil in a large skillet over medium heat.
- Add the garlic and cook for 2 minutes, stirring to prevent it from sticking.
- Add the artichoke hearts and cook for 2 minutes, stirring occasionally.
- Add the spinach, cottage cheese, parmesan cheese, basil, parsley, nutmeg, and pepper. Stir to combine.
- Spread the dip into an oven safe dish and bake for 25 minutes, until bubbling and lightly browned.
- Serve warm with crackers or slices of toasted whole-wheat bread. And don’t forget to add a dash of laughter to your meal!
