Ingredients
- 500g of calamari (with tentacles and the body split in half in a ring)
- 250g of fish or seafood
- 1/2 cup of bread crumbs
- 1/4 cup of parsley leaves (chopped finely)
- 1 clove of garlic (minced)
- 2 tablespoons olive oil
- 1/4 teaspoon black pepper
- 2 tablespoons of white wine
- Juice of half a lemon
Directions
- Preheat your oven to 180°C.
- In a mixing bowl combine the fish or seafood, bread crumbs, parsley, garlic, olive oil, pepper and a pinch of salt (optional).
- Mix everything together until it forms a paste like consistency.
- Take each half of the calamari and spoon the seafood mixture into it (aim for a 1/2 inch thick layer).
- Place the calamari ripieni on an oven-safe dish and drizzle with the lemon juice and white wine.
- Bake in the oven for 25 minutes or until the calamari is cooked through and flaky.
