Ingredients
- 8 rice paper wrappers, 8.5-inch round
- 2 ounces (approx. 50-60g) rice vermicelli
- 2 small handfuls of fresh bean sprouts
- 1 large carrot, julienned
- 2 tablespoons vegetable oil
- ½ cup (120 mL) vegetable stock
- 1 medium cucumber, julienned
- ½ head of green lettuce, shredded

Prepare the rice vermicelli according to package instructions.

Heat the vegetable oil in a medium-sized pan over medium heat. Once the oil is heated, add the carrot, bean sprouts, and vegetable stock. Cook for about 5 minutes, stirring as needed, until vegetables are cooked but still crunchy.

Meanwhile, soak the rice paper wrappers in warm water for 30 seconds, until they become soft. Lay the wrappers onto a flat surface and add a few tablespoons of the cooked vegetables, a few strands of rice vermicelli, pieces of cucumber and lettuce to each wrapper.

To roll the wrappers, fold the edges of the wrapper over the ingredients, and then begin rolling up the wrapper. When finished, press down lightly to ensure it’s tightly rolled.

Heat a skillet or large nonstick frying pan over medium heat. Place each of the rolls onto the hot skillet and cook for about 1-2 minutes on each side, until golden.
