- 500g pumpkin, peeled, deseeded, and finely diced
- 425g cooked, mashed chickpeas
- 201g finely minced onion
- 113g almond flour
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- 1/2 teaspoon garlic powder (optional)
- 1/4 teaspoon ground nutmeg
- 2 tablespoons olive oil
- Freshly ground black pepper (to taste)
Directions
- Preheat oven to 475°F (245°C).
- In a bowl, combine the pumpkin, chickpeas, onion, almond flour, cinnamon, allspice, garlic powder, and nutmeg.
- Mix everything together until combined.
- Using your hands, form the mixture into small patties (about 2-3 cm in diameter).
- Place them on a baking tray lined with parchment paper.
- Drizzle the olive oil over the patties.
- Place in the oven and bake for 25 minutes, flipping halfway, or until golden brown.
