Ingredients
- 1/2 teaspoon of olive oil
- 1 small red onion, chopped into pieces about the size of a fingernail
- 2 cloves of garlic, minced
- 1 1/2 cups of long grain rice (about 250 g)
- 2 cups of vegetable broth or water (500 ml)
- 2 cups of mixed vegetables, cut into pieces no larger than the size of a pencil eraser (such as carrots, peas, corn, and green beans)
- 1/2 teaspoon of freshly chopped parsely
- 1/4 teaspoon of ground black pepper
Directions
- Heat the olive oil in a small saucepan over medium heat.
- Add the onions and garlic and sauté for 2-3 minutes, or until the onions are soft.
- Add the rice and stir, cooking for 2-3 more minutes.
- Add the vegetable broth and increase the heat to high.
- Once the liquid begins to boil, reduce the heat to low and cover the saucepan with a lid.
- Simmer for 20 minutes, or until the rice is cooked and all of the liquid is absorbed.
- After the 20 minutes, add the mixed vegetables and stir.
- Cover the saucepan with the lid and cook for an additional 5 minutes, or until the vegetables are tender.
- Sprinkle the parsley and pepper over the cooked rice, stirring gently to combine.
- Serve hot with your favorite side dishes, and enjoy!
