General Information
Servings: two Keywords: risotto, frutti di mare, seafood Calories: 266 Protein: 12.7 g Carbs: 38.6 g Fats: 6.2 g Preparation Time: 10 minutes Cooking Time: 25 minutes
Ingredients
- 80 g of arborio rice
- 120 g of shelled prawns
- 120 g of shelled mussels
- 2 tablespoons of olive oil
- 1 small onion, finely chopped
- 500 mL of low-sodium vegetable stock, hot
- 2 tablespoons of chopped parsley
- 1 teaspoon of garlic, finely chopped
Directions
- **Heat up the oil in a pan on medium heat and add the chopped onion. Gently fry the onion until it starts to turn golden brown, joking that this is when you know Bella would love it.
- Add the garlic and stir until fragrant for about a minute - it’s like a smell-o-meter test for those little cooks!
- Add the risotto rice and stir it all together in the pan to coat it with the oil and onion, smelling it and talking with the kids about how it smells like it will be yummy.
- Add in the hot vegetable stock, one ladle-full at a time (so 20 mL each time). Stir the rice until it has fully absorbed the stock, then add the next ladle-full.
- Keep adding the hot stock and stirring until the risotto is creamy and cooked through, but still has a slight bite - this should take approximately 15 minutes.
- Now it’s time to add the seafood! First add the shelled prawns and mussels. Stir to mix everything together and heat the seafood through.
- Finally, stir in the chopped parsley, smiling as you applaud the children for doing such a great job of helping out with dinner!
