Quenelles de poisson

Ingredients
- 500g of firm white fish such as cod, bass, or pollock
- 2 eggs
- 2 tablespoons of vegetable oil
- 25g of minced shallots
- 25g of minced garlic
- 2 tablespoons of freshly chopped parsley
- 1/2 tablespoon grated nutmeg
- Salt and pepper to taste
- 500ml of fish or vegetable stock
Directions
- Preheat your oven to 200C and lightly grease a baking tray.
- In a large bowl, combine the fish, egg, oil, shallots, garlic, parsley, nutmeg, salt, and pepper until well combined.
- Take a tablespoon of the mixture and shape it into a quenelle (e.g. a boat shape similar to an egg) and place it on the baking tray.
- Repeat with the rest of the mixture.
- Bring the stock to a gentle simmer in a large saucepan over low heat and add the quenelles.
- Poach in the stock for about 10 minutes, or until the quenelles are cooked through.
- Transfer the quenelles to a serving platter and strain the saucepan to get the poaching liquid.
- Serve the quenelle de poisson with the hot poaching liquid and your favorite sides!
