Kaiserschöberl

Ingredients
- 2 tablespoons butter (or margarine to make it dairy-free)
- Zucchini (200g)
- Potato (100g)
- Carrots (100g)
- Onion (30g)
- Mushroom (40g)
- White beans (200g)
- Rice (120g)
- Water (100ml)
- Salt (optional)
Directions 1) Melt the butter in a large saucepan over medium heat. 2) Peel the potatoes, zucchini, carrots and onion and then grate them in a bowl. 3) Add the grated vegetables to the saucepan and cook for 10 minutes, stirring occasionally.

4) Chop the mushrooms and add them to the saucepan. Cook for a few more minutes. 5) Drain the white beans and add them to the saucepan. Let them cook in the vegetables for another 5 minutes. 6) Add the rice and water to the saucepan and stir everything together. 7) Cover the saucepan and let the Kaiserschöberl cook for about 15 minutes or until the rice has absorbed all the liquid and the vegetables are cooked through.
