Ingredients
- 400 g cooked prawns
- 2 tablespoons vegetable oil
- 2 ripped green chillis
- 1 finely diced red onion
- Small knob of grated ginger
- 2 cloves of garlicminced
- 1 cup carrots (roughly diced)
- 2 cups of cooked jasmine or long grain rice
- 1 tablespoon of light soy sauce
- 2 tablespoons of freshly chopped coriander

Steps
- Heat the oil in a wok or large frying pan over a medium-high heat.
- Once the oil has heated, add the diced red onion, grated ginger and minced garlic to the pan and stir-fry the mix until it’s fragrant and the onion has lightly caramelised (joke: What did the onion say when it was cut? I’m too
SAUCEional!). - Throw in the diced carrots and green chillis and continue to stir-fry for around a minute.
- Add the cooked prawns to the pan and stir-fry for a couple of minutes until they are well coated in the flavouring.
- Throw in the cooked jasmine or long grain rice, lightly breaking it apart with a spatula as you stir it through the mix.
- Add the light soy sauce and freshly chopped coriander and mix everything together gently until it is evenly combined.
- Push the mixture to the side of the panadding the scrambled eggs and stir-frying quickly to combine.
- Once everything is hotserve the fried rice in bowls and enjoy!
