Ingredients
- 1/2 large onion, (thinly sliced)
- 2 cloves garlic (minced)
- 1 bell pepper (sliced)
- 1 jalapeno pepper (sliced)
- 1 tbsp olive oil
- 1/4 tsp cumin
- 2 boneless skinless chicken breasts (diced into small cubes)
- 1/4 cup canned diced tomatoes (drained)
- 1/4 cup black beans
- 1/4 cup corn
- 1/2 avocado (sliced)
- Fresh cilantro (to garnish)
Directions
- Have your little helpers wash and slice the onion into thin slices. (Kids joke: Why did the onion cry? Because it was sliced!)
- Mince the garlic and have your little chefs measure 1 tablespoon of olive oil.
- Have your little sous-chefs help you brown the onion in the olive oil in a medium skillet over medium heat for a couple of minutes.
- Once the onion is browned, add the garlic and cook for an additional 1 minute until fragrant.
- Then add the diced chicken breast cubes to the skillet and cook over medium heat for 5 minutes, stirring occasionally.
- Once the chicken is almost cooked, add the bell pepper, jalapeno pepper, drained tomatoes, black beans, and corn.
- Sprinkle the cumin over the top and stir everything together.
- Cover and reduce the heat to low and let simmer for 15 minutes.
- Finally, uncover and raise the heat to medium-high and cook, stirring often, until chicken is cooked through
- Transfer to one large serving plate or divide evenly amongst 4 plates.
- Garnish with avocado slices and cilantro.
