Ingredients
- 500g penne
- 2 tablespoons olive oil
- 4 cloves of garlic (minced)
- 750g canned whole peeled tomatoes -fresh basil -fresh parsley
- pepper (to taste)
Directions
- Bring a large pot of water to a boil and add the penne and a pinch of salt. Cook for 8-10 minutes, or until the penne is al dente.
- Meanwhile, heat olive oil in a large skillet over medium heat.
- Add the minced garlic and saute for 1-2 minutes, or until fragrant and lightly golden brown. **(Joke: How do you know garlic is done cooking? When it starts to smell like garlic bread of course! ** ;) )
- Add the canned tomatoes and bring to a simmer. Simmer for 10 minutes, or until the sauce is thickened.
- Use a spoon to break apart the tomatoes.
- Season with a pinch of black pepper and add the fresh basil and parsley. Simmer for an additional 5 minutes.
- Drain the cooked penne and add to the sauce. Stir to combine.
- Serve with some fresh grated Parmesan cheese and enjoy!
