Ingredients
- 500g pasta
- 1 large eggplant, chopped into cubes
- 2 large tomatoes, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 4 tablespoons Parmesan cheese
- 2 tablespoons parsley, chopped
- Salt and pepper to taste
Directions
- Preheat the oven to 220 degrees C (425 degrees F).
- Place the eggplant cubes on a baking sheet and drizzle with olive oil. Roast for 20 minutes, or until golden brown.
- Meanwhile, cook the pasta according to package instructions until al dente.
- Heat the remaining olive oil in a large skillet over medium heat.
- Add the garlic and sauté for a few minutes until fragrant.
- Add the tomatoes and a pinch of salt. Cook for 10 minutes, stirring occasionally.
- Add the roasted eggplant to the skillet and cook for another 5 minutes.
- Drain the cooked pasta and add it to the skillet. Stir to combine.
- Sprinkle with the Parmesan cheese, parsley and season with salt and pepper to taste.
- Serve the Pasta alla Norma warm with the remaining Parmesan cheese.
