Ingredients
- 1 Onion, finely chopped
- 2 Chicken Thigh, diced
- 2 Eggs
- 2 cups Cooked Rice
- 4 tbsp Mirin ◦
- 1 packet Onion Soup Mix dissolved in 1/4 cup of Water
Directions

Heat up a large non-stick skillet over medium heat and add the chopped onion, stirring occasionally for about 5 minutes or until the onion has softened.

Add the diced chicken and continue cooking and stirring for a few minutes until the chicken has cooked through.

While the chicken is cooking, whisk the eggs together in a large bowl.

When the chicken is cooked through, reduce the heat to low and add the cooked rice, stirring to combine.

Pour the egg mixture over the chicken and rice and use a wooden spoon to stir until the egg has been thoroughly incorporated.

Add the mirin, onion soup mix and the water, stirring until the ingredients are combined and the liquid has been absorbed.

Cook for a few minutes, stirring occasionally until the egg is cooked through.
