Ingredients
- 2 large potatoes, peeled and cubed
- 1 large eggplant, cubed
- 2 large onion, finely chopped
- 2 large tomatoes, chopped
- 2 teaspoons cumin powder
- 2 teaspoons coriander powder
- 2 teaspoons turmeric powder
- 2 teaspoons amchur powder
- 2 teaspoons red chilli powder
- 2 tablespoons olive oil
- 4 tablespoons water
- Salt and pepper, to taste
Directions

In a large bowl, combine the potatoes, eggplant, and onion.

In a separate bowl, mix together the cumin powder, coriander powder, turmeric powder, amchur powder, and red chilli powder.

Add the spice mixture to the bowl of vegetables and mix it all together.

Heat the olive oil in a large pan over medium heat.

Add the onion and cookuntil softened.

Add the tomato, salt, and pepper, and cook until the tomato starts to break down.

Add the spiced vegetables and mix until evenly coated with the mixture.

Reduce the heat to low and let the vegetables cook for 5-10 minutes.

Add the water and cover the pan with a lid.

Let the vegetables cook for 10 minutes, or until they are tender.

Remove the pan from heat and serve the Oondhiya hot!
