Tarte au poivron

- 1⁄4 cup olive oil
- 1 leek, chopped
- 1 garlic clove, minced
- 3 red bell peppers, diced
- 2 tablespoons of butter
- 4 ounces of plain Alfredo sauce
- Pinch of nutmeg
- Salt and pepper to taste
- 1 refrigerated pre-made 9 inches puff pastry

Preheat the oven to 375 degrees F (190 degrees C).

Heat the olive oil in a medium skillet over medium-high heat. Add the leek and garlic; cook for about 2 minutes, stirring occasionally, until the leek and garlic are softened.

Add the bell peppers and cook for an additional 3-4 minutes.

Add the butter and Alfredo sauce to the pan and stir until the sauce is heated and evenly distributed. Sprinkle with nutmeg, and season with salt and pepper to taste.

On a lightly floured work surface, roll out the pastry to a 12-inch circle. Place the pastry in a 9-inch tart pan, pressing the dough into the edges.

Spread the vegetable mixture evenly over the pastry. Bake for 25-30 minutes, or until the pastry is golden and the filling is bubbly.
