Oatmeal Muffins

Ingredients
- 150 g oatmeal
- 5 g baking powder
- 125 g plain flour
- 100 g soft light brown sugar
- 2 medium eggs
- 200 ml milk
- 75 g butter
- 1 tsp ground cinnamon
Directions

Preheat the oven to 350°F/180°C/Gas mark 4.

Grease a 12-hole muffin tin with butter or line with paper cases.

In a bowl, mix together the oatmeal, baking powder, flour and cinnamon.

In a separate bowl, beat the eggs and add the milk.

Melt the butter and add that to the egg mixture.

Add the dry ingredients to the wet ingredients and mix until just combined.

Spoon the mixture into the muffin tin and bake in the oven for 25 minutes.

Test with a skewer to check if they’re baked through. If the skewer comes out clean, they’re done.

Let them cool in the tin for 5 minutes before transferring to a wire rack.
