- 2 lbs. pork shoulder, trimmed and cut into 2 cm cubes
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 tablespoons tomato paste
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 2 cups chicken stock
- 2 tablespoons fresh parsley, finely chopped
- 2 bay leaves
Directions

Preheat oven to 200°C.

Heat olive oil in a large oven-proof pot over medium heat.

Add pork and brown on all sides.

Add onions and garlic and cook until softened, about 5 minutes.

Add tomato paste and balsamic vinegar and cook for another minute.

Pour in chicken stock and stir to combine.

Add bay leaves and bring to a gentle simmer.

Cover pot and transfer to the oven. Bake for 1 hour.

Remove pot from oven and stir in parsley.

Return to the oven and bake for another 20 minutes, or until pork is tender.
