Ingredients
- 700 g boneless and skinless poultry meat, chopped into small cubes
- 2 cloves garlic, minced
- 2 onions, all-purpose, finely chopped
- 2 tablespoons fresh ginger, minced
- 4 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon Chinese cooking wine or dry sherry
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- 150 g mung bean thread noodles
- 2 medium carrots, peeled and shredded
- 3 stalks celery, chopped into small dice
- 2 tablespoons toasted sesame seeds

Begin by prepping all the vegetables. Mince the garlic, finely chop the onions, and mince the ginger. Peel and shred the carrots and chop the celery into small dice.

In a large bowl, combine the chopped poultry, garlic, onions, ginger, 2 tablespoons of the vegetable oil, soy sauce, and wine or sherry. Mix well and set aside.

In a small bowl, mix together the cornstarch and cold water to create a paste. Set aside.

Now it’s time to cook the noodles. Heat the remaining 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add the noodles to the skillet and stir-fry for 3-4 minutes. Add the carrots and celery and continue to stir-fry for another 3-4 minutes until all the ingredients are fully cooked.

Add the poultry mixture to the noodles and vegetables in the skillet and cook for about 3 minutes to get everything warm and mixed together.

Finally, add the cornstarch paste to the skillet and stir everything together. Cook for an additional 2 minutes until the sauce thickens.

Sprinkle the toasted sesame seeds over the Nems au poulet.
