Ingredients
- 500g Nalli Gosht (lamb shanks)
- 4 tablespoons vegetable oil
- 2 teaspoons cumin seeds
- 2 teaspoons ground turmeric
- 2 large onions, finely diced
- 5 cloves garlic, finely chopped
- 2 tbs finely chopped ginger
- 1 green chilli, finely chopped (optional)
- 2 fresh or 3 dried bay leaves
- 2 tablespoons ground coriander powder
- 1 teaspoon garam masala
- 2 teaspoons ground cumin
- 1/2 teaspoon ground black pepper
- 250g diced tomatoes
- 2 tablespoons chopped fresh coriander leaves
- 200g plain yogurt
Directions
- To start, add the vegetable oil to a large saucepan or pot on medium-high heat.
- Once the oil is hot, add the cumin seeds and wait for them to start to sizzle and lightly brown.
- Add in the finely diced onions, chopped garlic, and chopped ginger, and fry for a few minutes until the onions are golden and softened.
- Add in the ground turmeric, green chilli (if using), bay leaves, ground coriander, garam masala, ground cumin, and ground black pepper, and fry for an additional 1-2 minutes until the spices are fragrant.
- Add the diced tomatoes, nalli gosht pieces, and a 1/2 cup of water to the pot. Bring the mixture to a gentle simmer and cook for 20 minutes until the nalli gosht is tender and cooked through.
- Once the nalli gosht has cooked, take the pot off the heat and stir in the yogurt and coriander leaves.
- Serve the delicious nalli gosht with basmati rice and some lightly sautéed spinach or other green vegetables of your choice.
For a family friendly joke in step 6, you could say: “Stir in the yogurt and coriander leaves, and voila! Nalli gosht as good as a mother-in-law’s hug!”
