Mijotée de veau

Ingredients:
- 600g boneless veal, cubed
- 4 slices bacon, chopped into small pieces
- 2 carrots, diced
- 2 celery stalks, diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 500ml vegetable stock
- 2 bay leaves
- 2 sprigs thyme
- 2 tablespoons olive oil
- Freshly ground black pepper
- 1 tablespoon fresh parsley, chopped
Directions:
- Preheat oven to 180°C.
- In a large skillet over medium heat, add the bacon and sauté until cooked and the fat has rendered.
- Add the veal cubes and sauté for about 5 minutes until lightly brown.
- Add the garlic and onion and cook for a further 5 minutes.
- Add the celery and carrots and and continue cooking for another 5 minutes.
- Pour in the stock and mix well.
- Add the bay leaves and thyme, stir, and bring to a boil.
- Place the skillet in the pre-heated oven and bake for 1 1/2 hours.
- Remove from oven and sprinkle with freshly cracked pepper and fresh parsley.
- Serve warm and enjoy!
