Ingredients:
- 1/2 onion, diced
- 1 stalk of celery, diced
- 20 ounces dried vegetable broth
- 1 tablespoon white wine
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 2 cups dried red lentils
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 2 cups chopped fresh spinach
Directions:
- Heat olive oil in a large soup pot over medium heat.
- Add onion and celery, cook until softened, about 4 minutes.
- Add garlic and stir continuously for 1 minute.
- Add white wine and cook for an additional 1 minute.
- Add dried vegetable broth, lentils, cumin, coriander, and turmeric.
- Bring to a boil, reduce heat and simmer for 15 minutes.
- Add chopped spinach and simmer an additional 5 minutes.
- Serve Linsensuppe with a smile. “Soup’s on!”
