Ingredients
- 250g boneless and skinless chicken, like thighs or breasts (cut into bite-sized pieces)
- 2 tablespoons neutral-flavored oil, like vegetable or canola
- 2 tablespoons ginger, minced
- 2 tablespoons garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon cardamom
- 1/2 teaspoon garam masala
- 1/4 teaspoon cayenne pepper
- 400g canned diced tomatoes
- 2 tablespoons tomato paste
- 1/2 cup plain yogurt
- 2 tablespoons butter
- ¼ cup fresh coriander, finely chopped
Directions
- Heat the oil in a large skillet over medium heat.
- Add the garlic and ginger and cook until fragrant, about 1 to 2 minutes.
- Add the cumin, coriander, paprika, turmeric, cardamom, garam masala, and cayenne pepper and cook, stirring frequently, for 1 to 2 minutes.
- Add the chicken and cook, stirring occasionally, until it is lightly browned on all sides, about 5 minutes.
- Add the diced tomatoes, tomato paste, and pinch of salt and pepper, stirring to combine.
- Reduce heat and simmer, stirring occasionally, until the chicken is cooked through, about 10 minutes.
- Add the yogurt and butter and stir to combine.
- Simmer for an additional 3 to 5 minutes, stirring occasionally.
- Sprinkle with the fresh coriander and stir to combine.
- Serve warm with rice, naan, or chapati.
