Ingredients
- 250g courgette ribbons (2 courgettes)
- 2 cloves of garlic (3g each)
- 1 lemon
- 4 tablespoons olive oil
- Ground black pepper
- 75g whole wheat pasta, such as spaghetti (7 cups)

Let’s get peeling! Peel the garlic cloves by pressing gently on them with your fingers and then rubbing away the hard skin. Tip: Got to love that garlic smell!

Slice it up! Cut the courgettes into thin ribbons (think fettuccine) so it’s easier for little hands to eat. You can use a spiralizer for thisbut if you don’t have onea cheese grater will do the job just as well.

Make it zesty! Squeeze the lemon until you get about 2 tablespoons of juice and set it aside. You can use a sieve to separate the seeds from the juice - easier for toddlers to eat!

Bring a pot of salted water (1 teaspoon of salt per liter of water) to the boil

Add the courgette ribbons to the pot and cook for no more than 2 minutes. Tip: That’ll make them nice and crunchy!

Garlic time! Mince the garlic cloves (you can use a garlic press if it’s easier) and put it in a large bowl.

Mix it all up! Add the olive oil, the lemon juice and the ground black pepper to the bowl and mix everything with a whisk.

Time for some pasta! Add the whole wheat pasta to the boiling water and cook for about 8-10 minutes.

Drain the pasta and add it to the bowl with the sauce.

Add the courgette ribbons to the bowl and mix everything together.
