Ingredients
- 2 Carrots, peeled and grated (120 g)
- 1 Zucchini, grated (175 g)
- 1/2 Eggplant, diced (75 g)
- 1/2 Red Onion, diced (45 g)
- 4 Chicken Thighs, cut into cubes
- 1/2 cup Jarred Teriyaki Sauce (125 mL)
- 1 tsp. White Sesame Seeds (3 g)
- 1 clove Garlic, minced (3 g)
- 1/2 tsp. Ginger, minced (2 g)
- 1/4 cup Cornstarch (30 g)

Let your children help prep the vegetables by having them peel and grate the carrots, zucchini and dice the eggplant and red onion. Make sure to cut the vegetables into small pieces that your toddler can manage without choking on them.

Heat up a pan and olive oil to medium-high heat. Let the kids add the cubed chicken to the pan, stirring occasionally to make sure they cook evenly.

Add the teriyaki sauce, diced vegetables and white sesame seeds to the chicken and mix together.

In a separate bowl, mix the minced garlic, ginger and cornstarch together until a thick paste forms.

Add the paste to the chicken mix and stir until everything is well combined.

Take spoonfuls of the mix and form into small patties.

Heat up a large pan to medium heat with a bit of oil, and add the Karaage maki patties to the pan. Fry them for 5-7 minutes, flipping them over every couple of minutes to make sure they are evenly cooked and golden-brown.
