Ingredients
- 4 packages of Udon Noodles
- 2 cups vegetable stock
- 2 cups cold water
- 4 cloves garlic
- 2 tbsp of Olive Oil
- 1 tsp freshly grated ginger
- 4 chicken breasts
- 4 tbsp all-purpose flour
- 2 eggs
- 4 tsp soy sauce
- 4 tsp mirin
- 2 tsp sesame oil
- 4 Spring onions (sliced)
- Salt and pepper to taste
Directions

Bring the vegetable stock and cold water to a boil in a medium pot over medium-high heat. Add the udon noodles and cook according to package instructions.

In a small bowl, combine the garlic, grated ginger, 1 tablespoon of olive oil and a pinch of salt. Whisk together.

Place the chicken breasts in a large resealable plastic bag and pour in the garlic and ginger marinade. Let sit for at least 10 minutes.

While the chicken marinates, whisk together the flour and eggs.

Heat a skillet over medium-high heat with the remaining tablespoon of olive oil.

Dip each chicken breast in the egg and flour mixture and place in the skillet. Cook until golden brown and cooked through, about 4 minutes per side.

In a small bowl, combine the soy sauce, mirin, sesame oil and a pinch of salt and pepper.

When the chicken is cooked through, add the soy sauce mixture. Cook for another minute or two until the sauce has thickened.

Divide the noodles between 4 bowls and top with the karaage chicken.

Sprinkle with the sliced spring onion and serve.
