Kadala Curry

Ingredients
- 1 cup black chickpeas (kala chana, kadala) soaked overnight
- 1 medium-size onion, finely chopped
- 1/2 inch ginger, minced
- 3-4 garlic cloves, minced
- 1/2 teaspoon garam masala
- 1/4 teaspoon turmeric
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon ground red chili pepper
- 2 tablespoons vegetable oil
- Salt to taste
- 1 teaspoon ground black pepper
- 2 medium potatoes, boiled and diced
- 1/4 cup coconut milk
- Lemon juice to garnish
- Chopped cilantro to garnish
Directions
- Begin by soaking the black chickpeas overnight to help reduce the cooking time.
- In a pan, heat the oil and sauté the onions over medium heat until translucent.
- Add the minced ginger and garlic and stir together.
- Add in the spices (garam masala, turmeric, cumin powder, coriander powder, and red chili pepper) and mix well.
- reduce the heat and add the chickpeas and stir to combine.
- Add enough water to cover the chickpeas and bring it to a boil.
- Lightly joke - Now it’s time to turn up the heat!
- Reduce the heat and let it simmer for 30 minutes or until the chickpeas are tender.
- Add the boiled and diced potatoes as well as the coconut milk.
- Simmer for another 10 minutes.
- Finally, add salt and black pepper to taste.
- Garnish the kadala curry with some freshly chopped cilantro and a squeeze of lemon juice.
