Gyutan Donburi

Ingredients
- 4 large eggs
- 2 large escallion stalks (or 2 tablespoons of chopped onion)
- 2 tablespoons of avocado oil
- 400g of gyutan (Japanese beef tongue)
- 1 tablespoon of soy sauce
- 2 cups of cooked rice
Directions
- Start by cracking each egg into a medium bowl and whisking them together.
- Then, add the chopped onion or escallion stalk to the eggs and whisk together.
- Heat a 10-12 inch frying pan on medium-high heat and add the avocado oil.
- Once the oil is hot enough, add the egg mixture to the pan and let it cook for about 2 minutes.
- Flip the egg mixture once one side is light golden brown, and transfer it to a plate.
- Cut the gyutan into thin slices and add it to the same pan.
- Cook the gyutan for approximately 3-4 minutes until it’s lightly browned.
- Pour the soy sauce over the gyutan and stir fry for 1 minute until the sauce has been absorbed.
- Turn the heat down to low and add the cooked rice to the pan.
- Combine the rice and gyutan together and let it cook for 2 minutes.
- Finally, add the cooked egg mixture to the pan and combine all of the ingredients together. 12.Cook for an additional 1-2 minutes, or until the ingredients are thoroughly combined and the mixture is hot all the way through.
