Schupfnudeln

Ingredients
- 450 G potatoes (about 5 medium)
- 100 G all-purpose flour
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 tablespoons fresh parsley, chopped
- Ground black pepper
- Vegetable oil, for frying
Directions

Begin by preparing the potatoes. Wash and scrub them thoroughly and place them in a pot. Fill the pot with enough cold water to cover the potatoes completely. Bring to a boil and simmer for 15 minutes or until the potatoes are tender.

Drain the cooked potatoes and place them in an ice bath to cool them down. When cool, drain and allow to dry.

Grate the potatoes on the large holes of a box grater. Transfer the grated potatoes to a bowl and add the flour, olive oil, onion, and parsley. Mix until well combined.

Use your hands to shape the potato mixture into 2-3CM long, finger-like shapes.

Heat some vegetable oil in a large pan over medium-high heat. Fry the Schupfnudeln for 3-4 minutes, flipping them halfway through. Serve warm with a sprinkle of ground black pepper.
